Moisture in Nuts
To our valued customers and friends. For a quicker response explaining specifics with respect to our production of certain items, I am including a telephone number that will be more direct. You may call me at 209-604-6263 with any concerns or questions.
One example of questions from the past, is about the moisture content of certain produce. For example, we have had several questions about the moisture content of walnuts. In most cases walnuts purchased both online and at various farmers’ market locations have been shelled on the exact same day they were bagged for you. The walnuts can have a much higher moisture content depending on whether the rainy season is late or it has been an exceptionally wet winter. This would result in a relatively high moisture content in the nut. This is a natural occurrence and not unusual immediately after shelling.
I assure you the walnuts are definitely the freshest you will find. Keeping nuts fresh and good tasting is our foremost concern and if you have purchased different items from us in the past you will appreciate this. You should be aware that the allowable maximum moisture content is 7 percent. Quite frequently almonds approach this, as well as pecans, which are astringent if not below this threshold Walnuts almost always require drying to be processed or stored and especially to be shelled, or the shelling machinery will not separate the shell from the kernels.
